Rigatoni with roasted pumpkin, salami and olives.

  • 1kg butternut pumpkin, peeled, cut into small pieces.
  • 1 tbsp olive oil
  • 250g cherry tomatoes, halved
  • 100g thin salami slices, halved
  • 4 garlic cloves, bruised
  • 400g rigatoni or penne
  • ½ cup (40g) pitted kalamata olives
  • ¼ cup (20g) grated parmesan
  • 1 kg butternut pumpkin, peeled, cut into small pieces
Preheat oven to 200C or 180C fan. Line a baking tray with foil. Place pumpkin on tray and drizzle oil over the top. Season. Bake for 15 mins, until it starts to colour. Add tomato, salami and garlic and bake for another 10 mins, until vegetables are tender. Meanwhile, cook rigatoni in a large saucepan of salted, boiling water according to packet directions. Drain and return to pan. Add pumpkin mixture, basil and olives to pasta and toss to combine. Sprinkle grated parmesan and serve.
