Cucumber cooler cocktail

A light, refreshing cocktail with fresh lime and mint and a surprisingly pleasant crunch from cucumber slices.

Main ingredients
  • 1.5 oz gin (or 3 tbsp)
  • 4-6 cucumber slices
  • 1/4 lime, sliced
  • 4 oz tonic water
  • 6 mint leaves
  • 1 tbsp sugar (optional)
  1. Add mint, lime, gin, sugar (if using) to shaker and muddle.
  2. Add cucumber slices to shaker and shake vigorously.
  3. Pour mixture over glass filled with ice and top with tonic water.
  4. Stir, let set for a few minutes for the flavors to enhance, and enjoy.

For those who prefer a sweeter drink, add sugar to taste. However, it’s also quite enjoyable without.

Real lime mojito

A very refreshing drink for hot summer days. You can scale the recipe up easily if you want more than one

Ingredients list
  • 10 fresh mint leaves
  • 1/2 lime, cut into 4 wedges
  • 2 tbsp caster sugar
  • 1 cup ice cubes
  • 45ml white rum
  • 125ml soda water
  1. Place mint leaves and 1 lime wedge into a glass.
  2. Use a muddler to crush the mint and lime to release the mint oils and lime juice.
  3. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture.
  4. Fill the glass almost to the top with ice.
  5. Pour the rum over the ice and fill the glass with soda water.
  6. Garnish with the remaining lime wedge.

For those who prefer a sweeter drink, add sugar to taste.

Caprioska cocktail

A Caprioska is a much more accessible alternative to a Caipirinha, a cocktail that uses the sometimes-hard-to-find Brazilian alcohol, cachaça. Popular in South America, the Caprioska is refreshing and uses ingredients that anyone can find – and the prepared will have on hand anyway.

We love this drink and think you will too. Careful though – they go down ridiculously easily.

Ingredients list
  • 2 nips (60ml) vodka
  • 1 lime
  • 1 tsp brown sugar (or to taste)
  • Ice
  1. Cut the lime into wedges and put in a cocktail shaker with the sugar.
  2. Crush it together with a muddling stick or a pestle.
  3. Add the vodka and crush just a little more.
  4. Add the ice and shake the cocktail shaker till it's all mixed.
  5. Strain into a glass and drink with some mint leaves and lime as garnish or put in a tumbler and top up with soda water.
