St. Cloud’s Spiced Mung Bean Dip

This spiced dip from St. Cloud in Hawthorn, Victoria, is the perfect dish for a casual outdoor setting. Pair with crusty bread as a perfect starter or serve alongside platters of BBQ meats and roasted vegetables for the main event.

  • 200g dried mung beans
  • 400ml coconut milk
  • 1 tsp cumin powder
  • 1 tsp curry powder
  • 1 tsp paprika
  • 1 lemon
  • Salt & pepper (to taste)
  • 1 bunch of fresh coriander leaves
  • Toasted slivered almonds
  • Crunchy fresh bread, to serve
1. In a pot, add all the dried mung beans and cover with cold water. Place onto heat and bring the water to the boil. Lower the heat and leave to simmer slowly for 45 minutes until beans are tender.

2. Strain beans and transfer into a blender.

3. Add coconut milk, cumin powder, curry powder, paprika and the lemon juice, blending until smooth.

4. Season to taste with salt and pepper and garnish with coriander leaves and toasted slivered almonds. Serve with crunchy fresh bread.
